Grilled Pizza
It’s easy! Just pick up fresh dough from your favorite pizza place and get ready to throw a little flour. Grilled pizza is a great date night recipe because you can make it together. You will create a crisp and smokey crust with a soft and chewy inside. Trust me, the dough will not stick to a hot grill. Be creative with the ingredients. Try cooked shrimp, garlic, parsley and lemon or a veggie version with grilled peppers, onions, mushrooms topped with Fontina.
TGB Tip: A stovetop grill pan does the trick for my city apartment. Buy a cast iron grill pan that extends to the length of two burners. Use an empty wine bottle to roll out the pizza.
Ingredients
8 Roma Tomatoes, 1/4-inch slices
1/4 t chili flakes
3T olive oil
16 oz fresh mozzarella, 1/4-inch slices
8 oz prosciutto
10 fresh basil leaves
small fresh pizza dough (from your favorite pizzeria)
1c flour
Turn grill on to medium heat. Sprinkle 1/4 cup flour on to counter top. Place pizza dough in center of counter. Place left palm in center of pizza dough. With right hand, pull dough from the center out. Rotate 10 degrees. Repeat until pizza expands to roughly 8” x 8”. Coat rolling pin or wine bottle with flour. Roll dough out to roughly 8” x 16”. Sprinkle flour on to counter top when necessary. Place dough on a hot grill for 3 minutes. Flip. Place tomatoes, chili flakes, olive oil, mozzarella, prosciutto and basil on top of crispy side of pizza. Close lid or place aluminum foil loosely on top of pizza. Grill for 3 minutes. Remove, cut and serve.

Chad Carns moved to New York City from Pittsburgh to create the next Superbowl commercial. Working as a graphic designer during the day, like a magnetic, he felt NYC pulling him to a new culinary adventure every night.
Carns eventually put his graphic design career on hold, studied global cuisine and wine at the Institute of Culinary Education and self-published The Gourmet Bachelor: Global Flavor, Local Ingredients cookbook in his tiny Bleecker Street apartment above John’s Pizza.
Chad happily balances his passion for food and design as Creative Director of Carns Concepts, a brand media company focusing on food and wine, and as a private chef teaching bachelors how to cook gourmet!
